
Pork medallions with potato salad
Good choice! Little fat (despite this being pork) and a lot of veggies.
Let's just go to work shall we?
For 2-3 hungry mouths we're gonna need most of what's on the picture, so let me just write it down, ok?
- Pork Fillet (approximately 500g)
- Young potatoes (500g)
- 1 middle sized onion
- Some celery (1 stem should be enough)
- Some parsley (I like the taste of it so I use it a lot)
- A big (800g) can of french beans (you can use fresh ones, but you should cook em first)
- A decently sized green paprika
- A small young pumpkin (zuchinni would do fine also)
- A few garlic cloves
- Pepper, Herbs de Provanse, powdered Chilli, powdered Ginger, Cayenne Pepper, dried hot paprika, lemon peel
- Oil, Vinegar and Soy Sauce

Step 1:
First we're gonna need to wash all that stuff (you wouldn't believe how many poisons farmers use to make those veggies look good). After that we're gonna cook the potatoes and prepare the meat. Take the pork fillet and start cutting off the medallions (about 1.5cm thick).
For the last two medallions we're gonna just cheat a little (cut the last part in half horizontaly).

Step 2:
Now put those medallions on a large plate nd season them with salt on one side and dried hot paprika, pepper, herbs de provanse & lemon peel on the other.

Step 3:
Just pour some soy sauce over that and put everything into the fridge (the meat will soak up the sauce).

Step 4:
Next we're gonna start preparing the veggies. Clean out the green paprika and chop it up into little sqared thingies (make sure you make perfect angles *giggle*).

Step 5:
You should pretty much repeat the process with the pumpkin... just dice the damn thing! And throw everything into a small bowl.

Step 6:
Now let's take care of that onion... get that hard peel off of it and cut it in half and slice both halfs so you get a bunch of those half circles. *cute ne?*

Step 7:
Let's get a pan with a high border. Next you're gonna put in some oil and heat it up. After the oil gets hot (it strats to make some sort of ripples) just throw all the veggies into the pan and season it with some salt and chilli (don't forget to bring down the fire and stir once in a while...).

Step 8:
So what's next? Ah yes... the potato salad dressing... Get the garlic and dice it. Next, get the celery and parsley and chop it fine and nice *nod nod*.

Step 9:
Having done that throw everything into a small bowl and just add some olive oil and vinegar (I used some homemade stuff).

Step 10:
By now the potatoes should be done, so take em out of the water (peel them if you haven't done so before), and dice them. Throw them into a big bowl, add some salt, pepper and ginger, pour the dressing we made over them and mix it all up... yumm.

Step 11:
Now it's time to get that meat into a pan (go stir those veggies!). So yeah... get a pan, add some oil, heat it up as much as you dare and lay in those pork medallions.
Try to remember to put them in with the salty side down first (we don't want those spices burned to chark do we?). Turn down the fire and leave em there for 4-5 minutes (2 minutes if you want them raw).

Step 12:
Meanwhile let's make that French bean salad. Basically there's nothing to it. Just open the can, drain the beans and throw em into a bowl. Add some diced garlic, salt and pepper. Some oil and vinegar (I used rice vinegar).

Step 13:
There, our dinner should be done. OH! Meat and veggies... After those 4 minutes pass by just turn the meat around, turn up the heat and let it roast on the other side for another 2 minutes. The veggies should be done already (if you were stirring...) so just put 'em on a plate, add the meat, and that's it... Just put those saladbowls on the table, put the plate in front of every person that's gonna dare and eat something you made and Bon Appetit.
